|A yummy holiday treat-Dark Chocolate-Covered Peppermint Graham Crackers!|
I don’t know why, but I love dark chocolate-covered graham crackers. The slight bitterness and richness of the chocolate plays well with the mild sweetness and crispiness of the graham cracker. For the holiday season, I searched high and low for dark chocolate covered graham crackers with peppermint bits, but was only able to find them in milk chocolate. While the milk chocolate version is good, if I’m going to eat a “treat,” I want it to be amazing!
My solution was to make them myself. These tasty delights are very easy to prepare and require only three ingredients: Graham crackers, dark chocolate chips and candy canes. I crushed the candy canes, heated the chocolate chips, dunked the graham crackers in the melted chocolate and sprinkled them with the crushed candy. What could be tastier and easier to prepare?

Dark Chocolate-Covered Peppermint Graham Crackers
7-8 graham crackers
3-6 candy canes
2 C. dark chocolate chips (I used semisweet, but would also use extra dark chocolate chips)
Place the candy canes in a plastic bag and crush into small pieces. Set aside. In a heatproof bowl, melt the chocolate chips over a double boiler or in the microwave. If using the microwave oven, use 30 second intervals and stir each time, stopping when the chips are melted.
Enrobe the graham crackers in chocolate, place on a parchment-covered cookie sheet and sprinkle with peppermint candy. Allow the chocolate to harden (This process can be sped up by placing them in the refrigerator.) Enjoy!
Note: If the chocolate hardens too much, reheat the chocolate over the double boiler or in the microwave at 15 second intervals, stirring until the chocolate is soft again.
