The Whole Dish's Avocado Bacon Crustless Quiche

My friend Yvonne recently hosted a bridal shower, and she mentioned the Avocado Bacon Quiche she served was a big hit. To me, this crustless quiche is the perfect dish to serve at an occasion like this-it’s made with real ingredients, is low in carbohydrates, seems like the ultimate “ladies who lunch” entrée and is super tasty. It sounded so good that I looked up the recipe and made it for Kevin and me.

We love this dish so much that I wanted to share the recipe with everyone. It’s easy to prepare, can be made ahead, and the left-overs are just as good the next day. Better still, this quiche is light, yet oddly filling, and, of course, it has bacon and avocado. What could be better than that?

I substituted half and half for 2% milk because I didn't want to buy a big carton of milk. I've eaten it both ways, and they're equally good.
