Almond Joy Energy Bites
In an effort to lose a few pounds, I've been cutting back on refined sugar and flour. The problem is that I miss sweets. My taste buds are adjusting and when I do eat foods containing refined sugar, they taste almost too sweet. These Almond Joy Energy Bites are perfect for my situation-they're sweet, but contain no refined sugar or flour, provide nutrients and fiber and are so tasty! They're so good, my husband (who isn't cutting back on sugar) likes them!
These energy bites are so easy to prepare and can be made in about 10 minutes. I made a half batch, and they lasted about a week in the refrigerator. Because the dates I used were a little dry, I ended up adding 1-2 tablespoons of water to make the mixture stick together. If you interested in eating a healthier treat, give this recipe a try.
Be sure to remove the date pits
Combine all ingredients the bowl of the food processor
Stop chopping the ingredients when they start to come together and
then roll into balls. I chose not to roll the energy bites in coconut
