Cooking and Entertaining: Crème Brulee Cookie Bars

The creme brûlée bars are to-die-for!

I usually try to avoid posting recipes that I find on cooking blogs, but this recipe is so amazing that I wanted to share it. These treats are so good that I’ve made them twice in the last month, once for Kevin’s coworkers and once for our son. It’s a sweet, dense cookie bar, topped with toffee bits and tastes just as one would imagine if crème brulee were a cookie.

Even though the original recipe explicitly states not to overbake them, I baked these bars longer than suggested (30 minutes before adding the toffee bits and then an additional 10 minutes) because I’m not a fan of even slightly underbaked cookies. I also substituted vanilla bean paste for vanilla extract to get a stronger flavor. Whether you use my hacks or the original recipe, you’ll fall in love with these unique bars.
