Room Iced Sparkling Espresso with Mint
When I went to the Starbuck Reserve Roastery and Tasting Room (click here to see that post), I drank an Iced Sparkling Espresso with Mint. It consisted of espresso, Demerara simple syrup, and sparkling water served over ice with a sprig of mint. It was light and refreshing, not too sweet and tasted like an espresso soda. I enjoyed that drink so much that I’ve recreated sit at home and now enjoy them regularly.

|Stir to combine|
Sparkling Espresso with Mint
1 shot espresso
1 Tbsp. Demerara simple syrup (Add more or less to suit one’s taste)
1 spring fresh mint
Fill glass 3/4 full with ice. Add espresso and simple syrup. Top with sparkling water to fill the glass, stir to combine and garnish with mint.
Demerara Simple Syrup
Add equal parts Demerara sugar and water to a small pot. Heat until sugar has dissolved. Cool. This mixture can be stored in the refrigerator for a week or two.
