Cooking and Entertaining: Giada’s Pan-Roasted Asparagus with a Crispy Fried Egg

A nutritious, tasty dinner


Despite my ubiquitous Facebook food postings, we tend to eat pretty clean, especially during the week. One of my favorite cookbooks for this type of food is Happy Cooking, by Giada DeLaurentiis. Her recipes are easy-to-follow, light, nutritious and delicious! I recently discovered her Pan-Roasted Asparagus with a Crispy Fried Egg, but it’s one we both love and in pretty heavy rotation this summer!
