Fire and Ice Salad


I believe every cook needs a few simple, yet tasty dinners for those nights when one just doesn’t feel like cooking.  This Fire and Ice Salad is perfect for those nights-it uses prepared ingredients, namely frozen Buffalo chicken bites, French-fried onion strings and Mandarin oranges and is so good that it’s one of our family favorites.

Inspired by a salad of the same name sold in a café in St. Louis, I lightened it up by replacing the ranch dressing with vinaigrette, and by using a small amount of flavorful blue cheese in place of lots of shredded mozzarella.  Though I tend to be a recipe follower, this salad is easily changeable, so feel free to change the ingredients to suit your taste!

the vinaigrette contains 2 Tbsp. olive oil, 1 Tbsp. red wine
vinegar, 1 tsp. Dijon mustard, salt and pepper


Fire and Ice Salad

Salad greens
Tomato, sliced
Avocado, diced
Mandarin Oranges, drained
French-fried onion strings
Blue cheese
Buffalo chicken bites
Dressing (I made Dijon vinaigrette, but choose any dressing you like)


Use as much of any ingredient as you wish. Combine all ingredients and toss.
